Neighborhood croissant café

The croissant is the point.

Sugo Café laminates butter dough every night and bakes it in trays all day. Coffee sits beside the oven. Nothing here is yesterday’s pastry.

Morning

First tray. Classic butter, still crackling.

Late morning

Almond and chocolate join the case.

Afternoon

A last bake for the late coffee crowd.

Why we exist

A café that refuses a cold pastry.

Most places bake once. We bake on a clock. Dough rests overnight, then goes into the oven in three waves so the croissant you order is close to the one that left the tray.

Espresso, filter, and a short board of drinks keep the room moving. The pastry is not a side. It is the reason the door opens.

How we laminate

Butter croissant

Shattering shell, honey interior, salt that holds the sweetness.

The house pastry

Almond & chocolate

Filled after the first bake, returned to the oven until the edges caramelize.
